Five Easy Camping Recipes From Four Wheel Campers
Eating delicious food can make all the difference between a good adventure and a great adventure. These five easy camping recipes are key to a successful trip, because let’s be honest, on your third-day camping, that granola bar in the bottom of your food pack isn’t looking too appetizing anymore.
When packing for a camping, overlanding, or road trip, thinking about what to eat can sometimes be the most challenging part. After all, it’s not like slide-in camper fridges or coolers have the same capacity as your home appliances. Plus, you want to ensure your meals are packed with carbs & protein to help provide energy for exploring.
Successful camp meals are all about recipes that don’t require too many ingredients yet pack a powerful & tasteful punch. Here are a few of our favorites.
#1 Chicken & Rice Burritos
This easy camping recipe is always a truck camper/overlanding favorite because only a few ingredients need to be refrigerated, and it keeps well for the perfect lunch snack the next day!
Ingredients:
- 8 tortillas
- 2 packets Ben’s Original Ready Rice
- 2 Starkist chicken packets
- ¼ cup shredded cheese
- 1 red onion
- 1 cilantro lime sauce (or Sour Cream)
Directions: On your camp stove, mix Spanish rice & chicken with two tablespoons of water. Stir frequently until warmed, usually about five minutes. On a tortilla, spoon the rice chicken mixture and top with cheese, red onion, and cilantro lime sauce for an excellent fuel-filled meal.
#2 Potatoes & Sausage
A heart meal packed with protein and carbs for energy, potatoes and sausage is an effortless meal that is best made over an open campfire. After you arrive at your campsite, pop up your camper, get a fire going, and enjoy this tasty and delicious hearty meal in no time!
Ingredients:
- 1 package foil
- 1.5 pounds red potatoes
- 2 packs smoked sausage
- 1 pack turkey Bacon
- 1 cup sour cream (optional)
- 1 tablespoon cajun seasoning
- 1 tablespoon parsley
- 1 tsp salt
- ¼ tsp garlic Salt
- ¼ tsp pepper
Directions: First, make the campfire and let the coals get hot. While the fire is warming up, combine all ingredients in a bowl and stir. Cut foil into 12×12 squares and spoon potato sausage mixture into squares until the bowl is empty. Wrap the foil into a tight ball and seal it thoroughly. Place foil packets over a fire and cook on each side for 15-17 minutes. Test potatoes and cook longer if necessary. If desired, add one tablespoon of sour cream over each serving.
#3 Quesadillas
Quesadillas are one of those meals you can keep simple or go all out: but no matter what, it tastes delicious. And if you think they taste good at home, wait until you try them while on your next pop up truck camper expedition!
Ingredients
- 8 tortillas
- 1tbs cooking oil
- 4 2 Starkist chicken packets
- 1 packet taco seasoning
- 2 cups shredded cheese
- 1 cup sour cream
- 1 cup salsa
Directions: in a medium bowl, combine chicken packets, cheese, and taco seasoning. Stir and set aside. Add cooking oil and 1 tortilla over low heat in a large skillet. Spoon chicken mixture onto tortilla and spread until covered. Add more cheese if desired. Fold tortilla and cook both sides until golden brown. Lower heat if cooking too fast and cheese is not melting. Repeat for every tortilla until mixture is gone. Cut and serve topped with sour cream and salsa.
#4 Scrambled Eggs & Ham
An easy five-ingredient breakfast that easy to prepare in your pop up truck camper or on a camp stove that provides all the deliciousness and protein needed for a day full of exploring.
Ingredients
- 12 eggs
- 1 cup honey ham
- 1 cup shredded cheese
- 1 tsp salt
- 1 tsp black pepper
Directions: Before you leave your house, stir eggs, ham, cheese, salt, and pepper in a bowl. Add entire mixture into a reusable gallon ziplock bag and stick in your freezer. Before you leave to go camping, transfer egg mixture from the freezer to the cooler or fridge. The next morning, empty the ziplock bag into a skillet on low heat, frequently stirring until eggs are cooked to your liking.
#5 Chicken & Veggie Kabobs
#5 on our list of easy camping recipes has to be none other than chicken and veggie kabobs! This mean is a perfect treat-yourself camp dinner that can be made over a campsite (with a cooking great) or your handy truck camper kitchen!
Ingredients
- 8 wood or metal skewers
- 1lb chicken
- 8 ounces mushrooms
- 2 red peppers
- 2 yellow peppers
- 1 onion
- ½ cup teriyaki sauce
Marinade:
- ⅓ cup honey
- ⅓ cup soy sauce
- ¼ tsp salt
- ¼ tsp pepper
- ½ tsp garlic powder
Directions: Combine ingredients for marinade in a bowl and set aside. Cut chicken into 1-inch squares. Cut mushrooms in half, then cut red peppers, yellow peppers, and onion into 1-inch pieces. Stir chicken and vegetables into a marinade bowl and sit for at least 3 hours.
Once ready to eat, start a fire or grill and let it get hot. Assemble chicken and vegetables onto individual skewers. Place the skewers either on the campfire grill or camp grill grate. Turn frequently for 12-15 minutes, or until chicken is cooked thoroughly.
